Ingredients:
2 cups grated carrots
2 cups whole wheat flour
1/2 cup Greek yogurt
1/2 cup honey or maple syrup
2 eggs
1/4 cup corn oil
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped walnuts (or other nuts like almonds)
Cream cheese frosting (optional):
- 225g reduced-fat cream cheese, softened
- 1/4 cup plain Greek yogurt
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 175°C. Grease and flour a 9-inch round cake pan or line it with parchment paper.
In a large mixing bowl, whisk together the whole wheat flour, almond flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
In another bowl, beat the eggs and add the honey or maple syrup, melted coconut oil, Greek yogurt, and vanilla extract. Mix until well combined.
Gradually add the wet ingredients to the dry ingredients, aiming for a ratio of approximately one-third to half of the wet mixture at a time, and stir until combined.
Fold in the grated carrots and chopped nuts (if using) until evenly distributed.
Pour the batter into the prepared cake pan and spread it out evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
To make the cream cheese frosting, beat together the softened cream cheese, honey or maple syrup, Greek yogurt, and vanilla extract until smooth and creamy.
Once the cake has cooled, spread the cream cheese frosting over the top.
Optionally, garnish with additional grated carrots or chopped nuts before serving.
